Cholula comes from a small town on the banks of Lake Chapala not far from Guadalajara, called Chapala. The 'Molcajete' - a pestle and mortar made
out of volcanic rock plays a fundamental role in Cholula's rich Mexican heritage.
Used for centuries by the Aztecs and early Mexicans to grind a range of ingredients together. Today though produced in larger batches, Cholula is made in a very similar way.
